Dried king oyster mushrooms

Thinly sliced and left to dry: concentrated flavour for the whole winter.

Time20 min
Servings1 jar
DifficultyEasy

Ingredients

1 kg fresh king oyster mushrooms
A clean cotton cloth
An airtight glass jar

Method

1

Clean the mushrooms dry with a brush: never water, or they won’t dry properly.

2

Slice them 3–4 mm thick, all the same thickness.

3

Spread them on a cloth or racks in a dry, airy spot, out of direct sun.

4

Turn them once a day for 3–4 days until they snap instead of bending.

5

Alternative: fan oven at 50 °C with the door ajar for 6 hours.

6

Store in an airtight jar in the dark: they last a year.

Tip

To use them, soak for 20 minutes in warm water and strain the water: it’s concentrated mushroom stock.

This recipe starts from king oysters picked an hour earlier. The kit grows them on your windowsill.
